Kamairi-cha (釜炒り茶) literally means “pan-fired tea” and is classified as a Japanese green tea. It is a regional specialty mostly produced in western and southern Japan, especially Kyushu (Saga, Kumamoto, Miyazaki, etc.).

How it is made : 
Unlike sencha and most Japanese greens that are steamed to stop oxidation, kamairi-cha is heated directly in an iron pan or mechanical kettle at high temperature, typically around 300–400°C. The leaves are continuously stirred to prevent burning, then rolled and dried, often into comma- or magatama-like curled shapes rather than straight needles.

Flavor and aroma :
The pan-firing process produces a light, refreshing liquor with a warm, gently roasted fragrance called “kama-ka” (釜香). The taste is usually mellow, low in astringency, and can show sweet, nutty or slightly caramelised notes.

Nutritionally it is similar to sencha, with relatively high levels of vitamins such as C and B-group, while offering a different aromatic profile for those who prefer less bitterness and a softer mouthfeel.
