Saikyo Miso originated in Kyoto and has been a valuable part of the Imperial Palace’s hare (soul rejuvenation) ceremonies and has developed along with the food culture of the capital city. When the capital moved from Kyoto to Tokyo the nobility named the brand, "Saikyo Miso" to give them their status as the Miso that was favoured bu the court.
It is known for its generous amount of rice malt, its sweetness due to its low sodium content, and its beautiful light beige colour. The company has gained national recognition to the point that the name, Saikyo Miso, has become synonymous with white miso. The miso is exclusively used by chef Nobu at all of the Nobu restaurants.
Types of Miso:
White Miso: Kyoto-specific Dengaku miso made with sesame seeds based on white miso and finished with a rich flavour. It can be used as it is for tofu, vegetables, konjac, etc. Dengaku (miso glazed dish) or it can be used as a base for original sauces by adding a few simple ingredients to marinate fish, sea food, stir-fried meat, and a variety of other dishes.
Red Miso: A mellow red miso that is a mixture of bean miso and white miso. It can be used for tofu and grilled eggplant, meat and Dengaku dishes, as well as for miso oden, soups, and grilled rice balls.
Yuzu: The sweetness of the white miso and the refreshing aroma of yuzu enhance the taste of the ingredients. Ideal for grilling with vegetables, fish and seafoods.It is also recommended as a dip for raw vegetables and cold tofu.
Karashi Mustard: A wonderful all-around condiment, put it on fresh seafood, fish steamed vegetables & salad. It is especially tasty with bite size pieces of firefly squid, octopus, shrimp, and tomato. Try mixing the miso with olive oil and herbs as well.
