A strong impact, a silky mouth at first, which suddenly becomes precise and sharp, mineral. Super precise and thirst-quenching, a nihonshudo of +20 which allows it to accompany any type of food without tiring, delicately perfuming and refreshing the palate between each mouthful. Detailed tasting notes: On the palate, the flavors suddenly express themselves, a strong impact. It is silky at first, then suddenly becomes precise and sharp, mineral! It ends with a slight bitterness that adds to the general feeling of tension. The palate is delicately perfumed. We come back to thirst-quenching sensations, the quality of the water, the freshness, an incredible sharpness.
Tasting advice: A sake that marries superbly with oysters for the tension and its slightly aniseed side, but also with white fish sashimi. With raw vegetables, white meats accompanied by fresh herbs, parsley, basil, coriander.
About the brewery: Yamagata Prefecture is considered the "Kingdom of Sake" because it brings together many top-notch Kura. Shuho Shuzojo is one of the region's rising stars, and although its establishment dates back to 1890, it has recently distinguished itself for the quality of its sakes, both among its peers and in competitions.
