This salt is made by pumping sea water from Toragasaki in Yamaguchi prefecture, on the coast of the Japan sea. The sea water is boiled for 10 days using firewood furnace in the nearby city of Hagi. The salt is mellow and rich and contains umami in its saltiness.
The yuzu is harvested locally from farms in Yamaguchi prefecture.
