    Gyokuro is premium tea, the characteristics are the unique strong flavour and the strength of sweetness. The secret of this taste lies in how the farmer grows the tea.  When the new tea leafs appear, the tea is covered with rice straw to protect from directly sunlight. The leafs are picked after about 20 days. It has a lot of amino acids and is wrapped in a unique scent. By not being exposed to the direct sunlight, theanine, which is a component of tea's umami, increases, giving it a strong, mellow sweetness component peculiar to gyokuro.

    "Yame" in Fukuoka Prefecture, is a production centre of high-class tea that attracts Japanese tea lovers. It is a region that consistently wins awards for it's tea, particularly Gyoukuro. Since ancient times, Yame has been regarded as an area with ideal conditions for tea cultivation, and consists of an alluvial plain in which earth and sand (leaf soil) carried from both the Chikugo and Yabe rivers are alternately deposited and cultivated there.

    In this Yame region, not only tea, but also fruits such as strawberries, kiwis and oranges, grains such as rice and wheat, and various agricultural products such as chestnuts and plums can be obtained from the rich soil and multiple rivers. It is a land that benefits from good quality water.

    How to prepare:
    Water temperature: 50°C - Infusion: 3 minutes. 5g (for 1 person) for 25 cl of water.
