Even when brewed with boiling water, it does not easily become bitter. 

The mild sweetness and toasty nuance from the rice koji make it ideal after meals or for relaxing, and the low astringency makes it a good choice for those who find ordinary black tea too strong or irritating.Rice koji is a traditional Japanese fermented ingredient made by growing koji mold on steamed rice, and it is widely used for miso, soy sauce, and amazake; in this tea, it brings gentle, sugar‑free sweetness instead of heavy sweetness, helping you reduce added sugar while still feeling satisfied.

The taste of rice koji is softly sweet, reminiscent of light amazake, with a subtle grain-like aroma rather than a strong sugary flavour; paired with low‑astringency Miyazaki black tea, it creates a round, mellow profile that feels calming, warm, and comfortable, making it suitable for evening relaxation as well as with both Japanese and Western sweets.

Japanese black tea and green tea are made from the same tea plant, but the leaves are processed differently to create their distinct flavours. To make black tea you let the picked leaves fully oxidize (darken in contact with air) before drying them, while for green tea you stop oxidation quickly with heat.
