Traditionally this meant green tea plus rice only; matcha-iri genmaicha is a newer style that adds powdered matcha for a stronger green colour and flavour, but also more caffeine and intensity. By keeping this genmaicha free of matcha, the taste focuses on the gentle umami of the tea and the fragrant, nutty sweetness of the rice, without becoming too heavy.
