An essential tool to grate seasonings for Japanese cuisine such as wasabi, ginger and radish. The rough surface with ceramic makes ingredients to be easily grated. It is also easy to clean. Silicon attached to the bottom of the plate prevents slipping while using it.

This unique grater is crafted by a family company specialising in mortars and rasp graters since 1925. Based in the Iwami region of Shimane Prefecture, Japan, it preserves the rustic Iwami-yaki pottery tradition. The raw material, Iwami clay, is renowned for its excellent durability.

To create this grater they use a method that involves embedding ceramic fragments that are approximately three times harder than stainless steel. The ceramic chunks are crushed little by little with a machine similar to a pestle and mortar, then sifted by hand, and the larger particles are crushed again. We select each grain one by one while determining its cross section as a “blade.” Only about 15% of the pieces from a single piece of ceramic are selected. The arrangement is determined, and using an original machine developed from scratch, they place the blades on the ceramic evenly.
