Aromatic profile: Fine, heady. Notes of cherry brandy and Williams pear. Malty almost vanilla. Red and black fruits (raspberry, blueberry, blackberry). Rocky, mineral (schist, slate). Freshly cut grass, peppermint.
Nose : fine, rather lively. It turns out to be particularly heady. Notes of cherries in eau-de-vie and William pear bring a lot of elegance to the first nose. In a second time, it gains in sweetness and becomes tenderly malty almost vanilla. In reality, he never ceases to assert his strong personality. Wonderful.
Palate : racy, clean. Sparkling with youth, it brings to light the crystalline purity of its distillate. Straight, slender, it then gives way to red and black fruits (raspberry, blueberry, blackberry). Its frame is tight, almost rocky (schist, slate). Increasingly dynamic, it forms a peacock's tail on notes of freshly cut grass, peppermint and orange blossom.
Finish : long, tense. Its fruity register gives itself to heart joy, one finds mirabelle plums, queens-claudes, melon, candied oranges and fresh figs. Placed on a carpet of moss, wild flowers provide a bath of freshness. The retro olfaction and the empty glass are minty and cocoa.

Located in the heart of the Japanese Alps, the Shinshu distillery was founded in 1985. Dormant during the a few years, it resumed its activity in 2011.
