How to make
Infuse 3g of Hojicha in 150ml of boiling water for 30 sec.
Hojicha is roasted at a high temperature, so compared to high-grade sencha, it has less caffeine (bitterness) and vitamin C as well as amino acids (umami) and catechins (astringency).
It's fragrant and refreshing, so it's also recommended after a greasy meal or before going to bed. Although it is not positioned as a high-class tea as Japanese tea, it is often served during meals at Ryōtei , traditional Japanese restaurants.
