No additives or preservatives are used, and the miso is simply made with only soybeans, rice, and salt. Using only soybeans and rice produced locally in Aichi Prefecture based on the concept of local production for local consumption and visible raw materials.
Today, less than 5% of the total miso production in Japan is made in wooden barrels, which have been preserved since ancient times, and is fermented and aged.
Based on the philosophy of "growing miso", they are committed to fermenting all our miso in wooden barrels, and we are making miso with the help of useful microorganisms that live in wooden barrels and warehouses. They been producing naturally fermented miso, over a year and a half, in cedar wood barrels. The company also cultivates its own koji in a dedicated fermentation chamber to produce even better quality miso. The company makes it a point of honour to follow a certain harmony with nature, in which it respects a slow symbiosis of food during fermentation, without speeding up the process.
Although the product name is children's miso, it is not adjusted for children, so it is a miso that adults and people can enjoy together as a family.
