Katori 90 Sake - fish and seafood
- Fresh, mineral. Tangerine, melon, sage, flowers

Slightly coloured and slightly cloudy. Drink warm, chilled or at room temperature
Food and wine pairing: Tuna and eel sushi declination. Wok of salmon and prawns, spicy rice and coriander flower.
Different varieties of rice, koshi-hikari and akita-komachi, are used in its composition. The rice grains are only 10% polished. Against all expectations, the cereal is timid, so rich and complex is the aromatic palette of this sake.
The Katori 90 is a straight and elegant cuvée with a wide palette aromas without tangling its brushes: citrus and toasted nuts, sage and straw, mineral notes.
He uses very unpolished rice: the "90" of his name designates the remaining volume of rice grains with which it is brewed – in other words, almost whole rice.
Usually the layers of rice contain proteins considered undesirable by many brewers because they are supposed to give the sake an overwhelming taste of cereal. This cuvée proves that it is nota fatality.

Sake Junmai
Place of Origin: Chiba
Junmai Sake is brewed using only rice, water, yeast and koji. There are no other additives. To qualify as a Junmai, there is technically no minimum milling requirement, but the sake must be the “pure rice” style… no added distilled alcohol allowed.
