The Izumibashi sake brewery was founded in 1857, during the Edo era of Japan. Nestled in the heart of the Ebina region, Izumibashi has long benefited from the region's natural bounty, from the abundance of land for rice cultivation to the natural flow of water from Mount Tanazawa.

Even today, the brewery continues to respect traditional rice cultivation and sake-making techniques. These methods are passed down from generation to generation.

The "Akatonbo", the design on the sake label, reflects the image of a dragonfly hovering over the rice fields of the Izumibashi sake brewery. Visible from the brewery, Mount Oyama, a landmark respected by locals, is part of the mountain ranges of Tanzawa, where mineral-rich waters flow. This water source lends itself to the production of clear, umami-rich sake, which brings out all the flavours of the dishes it is paired with.

Izumibashi Kimoto Kurotonbo, traditional sake gives off cereal notes due to its Kimoto nature, with a beautiful aromatic power, slightly smoky.
