When the capital moved from Kyoto to Tokyo the nobility named the brand, "Saikyo Miso" to give them their status as the Miso that was favoured bu the court.
It is known for its generous amount of rice malt, its sweetness due to its low sodium content, and its beautiful light beige colour. The company has gained national recognition to the point that the name, Saikyo Miso, has become synonymous with white miso. The miso is exclusively used by chef Nobu at all of the Nobu restaurants.
